Lemon-Burst Cookies

Hello all.  I've seriously missed you, but I'm back, and hopefully for a long time.

I've shared this recipe with some of you and even some of the actual cookies.  If you, too, have a secret love affair with lemon and cookies, then this is the perfect cookie for you.

Lemon-Burst Cookies:

Makes 2-3 dozen

1/2 cups butter, softened
1 cup granulated sugar
1/2 teaspoons vanilla extract
1/2 teaspoons lemon extract
1 whole egg
1 teaspoon lemon zest
1 lemon...
1 tablespoon fresh lemon juice (from the lemon)
1/4 teaspoons salt
1/4 teaspoons baking powder
1/8 teaspoons baking soda
1&1/2 cup all-purpose flour
1/2 cups powdered sugar

Preheat oven to 350 degrees. Grease baking sheets with non-stick cooking spray, set aside.

In a large bowl, cream butter and sugar (not the powdered sugar) together until light and fluffy.  Whip in vanilla, lemon extract, egg, lemon zest, and lemon juice. (SAVE the remaining lemon for more use later in recipe!)  After you've mixed once, repeat mixing a second time.  Excluding the powdered sugar, stir in all dry ingredients until combined and mix again.  Roll a generous teaspoon of dough into a ball and roll it into the unused powdered sugar. Place on baking sheet and repeat with the remaining dough.

Bake for 9-11 minutes or until bottom edges begin to barely brown (golden-like) and cookies look matte, not shiny.  Remove from oven, leave on the baking sheet for 3 minutes then transfer them to the cooling rack.

After cooling, lightly re-dust with powdered sugar and squeeze your remaining lemon over the cookies for little flavor bursts of lemon in each bite.

*I use dark baking sheets, baking them for exactly 9 minutes was perfect.

[Are you a fan of pink?  UM, yeah!?  Why wouldn't you be?... if so, you can add a touch pink food coloring and (voila!) PINK-Lemonade cookies.  I know, mind blown.]

I can officially tell you these cookies are:  boyfriend, best friend, church-goer, mother, father, sister, and co-worker tested & approved.  SO, go ahead and make a batch of these!  AND if you're on a diet, they have fresh fruit in them, so it's justifiable... ok, a bit of a stretch, but I'm always here to help you with your strict diets. (PSH!)

So, enjoy... the whole batch in one sitting... because if you actually made these, then I know you ate them all.  It's impossible not to.
